Ezona and her husband, Captain Stacy, have been taking couples, families, and corporate parties on excursions and fishing charters for many years. Ezona had the opportunity to get into the business years ago and knew what had been missing all these years on the water with guests was the personal touch that she, her family and team bring to every charter and fishing trip. She understood that guests wanted to know about the stingrays they were swimming with and the fish they saw when they snorkeled and that they wanted a truly personalized experience for their family and not be just ‘another guest’ on a massive charter. And so, Ezona’s Aquatic Charters was born.
As this month’s Passenger Pick of the Month, we wanted to learn more about the story behind Ezona’s Aquatic Charters, so recently we caught up with inspiration behind it all, Ezona Moore.
PP: Ezona, it is such a treat to meet you. We’ve been hearing so many great things about you from so many. How long have you been captain of this boat?
EM: I have been the captain of the Heavenly Hooker for 28 years here on Grand Cayman. This boat has had a name change or two over those years, but I have been her captain the entire time. I just love the water, in fact I like to say that I get motion sickness when I’m on land!
PP: That’s hilarious! What’s your favorite part of your role as captain?
EM: Tough question, I love so many aspects of it. Let’s see, I love creatively customizing my guest’s charter experience, I love the excitement I see in my guests eyes when they experience a stingray or catch a big fish, I love cooking for my guests, I love the children, and I just love nature.
PP: You mentioned that you’re willing to customize the tour. Tell more about that.
EM: I am. I’ll make it up on the spot, depending on what a particular set of guests wants to do. We can go to the stingray city sandbar, to the coral gardens, or whatever. Other times folks want to get to the other side of the island and have lunch at Kaibo and taste one of their famous Mud Slides. And frolic on the beach a while. It is all up to the wants and needs of the folks I am serving.
PP: How many guests will you take on your charters?
EM: I love small groups. 12-13 folks are a typical max on the Heavenly Hooker. We can accommodate one group or mixed groups.
PP: Then there is your new your new speed boat Cinnamon. Tell us about her.
EM: Cinnamon is our 40 ft Center Console Go-Fast boat. It has three 300 HP outboards for 900 total HP. It seats 18-20 guests. You can be in stingray city in 10 minutes from the Cayman Yacht Club. It’s the only boat like it on Grand Cayman!
PP: So what might a typical full day charter with you might entail?
EM: When you book us for a full days’ snorkeling trip, you’ll enjoy a delicious complimentary seafood Beach Lunch consisting of fresh caught fish (usually yours if you throw out a line) as well as any conch or lobster we swim down and catch along the way (in season). Stingray City and several private snorkeling stops are included in addition to your lunch break. 85% of the people who experience this treatment end up chartering again on a subsequent trip. It’s simply the best aspects of what we offer with delicious ingredients and a friendly smile. All cooked in our boat’s private kitchen while you play with our underwater friends along with our first mate and hands. This is not your typical boat charter experience. In this picture you see a family who has been coming back year after year for more than 20 years.
PP: So you’ll cook this lunch on the boat yourself? Tell us more.
EM: What I cook depends on what is in season of course. Many times we’ll catch their meal right out of the ocean! Like fresh conch and free diving for lobster during lobster season. I am able to bring some culture to their overall experience by making some local dishes. Bringing fresh farm to table vegies and fruits used in many culinary dishes on the island. Once I ask them about the experience they want to have I personally shop for them and bring all they need to the boat. Typically we’ll have either mahi-mahi, conch, or lobster cooked in coconut oil, with white rice, coconut bread, green salad and breadfruit.
PP: Sounds delicious! You mentioned the Stingray City. Tell us more about that experience.
EM: Stingray City is like an escape to a world where gentle giants soar like eagles and reality exceeds even the most vivid imagination. I love capturing the magic of Stingray City where you will be mesmerized by the antics and charm of these fascinating gentle giants. I call them my sea puppies. My private charter experience is geared so my guests have a quality time with the rays, not feeling rushed. I feel the rays sense when you are relaxed and have lots of time to hold them correctly. I love to see the expression on the children’s faces when they hold a stingray for the first time.
PP: Ok, now tell us about the fishing.
EM: We’ve had some very productive and exciting fishing charters. When I see a young boy or girl pull a large fish out of the water many times the bigger than them! The joy in their eyes… at that moment I have helped make a Cayman memory that will last a life time! Our primary vessel is a beautiful 33′ Bertram Cruiser with twin diesels jokingly tagged the “Heavenly Hooker” due to us winning several fishing competitions “with thanks to God.” It’s fully-equipped with a restroom, kitchen and complete supply of fishing supplies or snorkeling gear and fins. Our top section (fly bridge) has a large cushioned shaded area as well as plenty of cushioned seating below for groups of 10 or more.
PP: Tell us what kind of fishing is available for half day and full day charters.
EM: We do fishing charters for any and all styles of fishermen and fisherwomen, and also happily cater to children. I like to say, Teach a child to fish and they will enjoy it for a lifetime! Available in both full and half day bookings, here are a few fishing options: Mixed Fishing, Reef Fishing and Deep Sea Fishing.
PP: Ezona, we just love your spirit, your humility, your heart for people, and your love of Cayman and all it has to offer. It’s no wonder you’re becoming more and more popular.
EM: Thank you. We are blessed in so many ways. Each day is another opportunity to enjoy what God has created and to touch another person for good.
